These roasted veg and tofu skewers are cooked until tender with lightly charred edges, then brushed with a sticky miso jerk glaze that brings sweet heat, savoury depth, and a glossy finish.

The key to great roasted vegetable skewers is timing:

Roast first. Glaze later.

Cooking the veg and tofu on their own allows them to soften and char. Adding the glaze at the end keeps it sticky and glossy instead of burnt, coating everything evenly.

RECIPE

Ingredients

Mixed veg (peppers, mushrooms, onion) and/or firm tofu, cut into chunks
1 tbsp oil3 - 4 tbsp AMA’s Sticky Miso Jerk

Method

Prep:
Preheat oven to 200°C (fan).
Thread veg and tofu onto skewers (or roast loose on a tray). Toss with oil and salt.

Roast:
Cook for 20–25 minutes until tender and lightly charred.

Glaze:
Remove from the oven and brush over AMA’s Sticky Miso Jerk.

Finish:
Return to the oven for 5–8 minutes until sticky and glossy.

How to Serve It:

With rice, flatbreads or a fresh salad - anything that soaks up the extra glaze.

Chef’s Notes:

Skewers or not, both work. Spread out on a tray for easier roasting.

Use firm tofu. It holds its shape and gets better texture.

Don’t glaze too early. The sugars will burn before the veg cooks.

Add extra glaze at the end for more punch.
